What are some of the old forgotten recipes of Indian dishes?

In my journey through the culinary history of India, I stumbled upon some old, forgotten recipes that truly capture the essence of our diverse cuisine. From the hearty Dal Bukhara, slow-cooked for hours to achieve a velvety texture, to the spicy, tangy Dhansak, a Parsi delicacy, these dishes tell tales of bygone eras. The sweet Sutarfeni, a Gujarati dessert, and the savory Pahadi Chicken from the Himalayan region are also worth mentioning. Unfortunately, these traditional recipes are fading away as time passes, but they remain an integral part of India's rich culinary heritage. I believe it's high time we revisit these recipes and bring them back to our kitchens.
